Take the tomatoes and cut their upper part (in a circular slice). Remove the tomatoes pulp and cut them into small cubes.
Add some olive oil in a deep pan, add garlic cloves (chopped) and onions (cut into small cubes). Stir and cook them for about 5 minutes on low heat.
In the pan add zucchinis (cut into small cubes), carrots (cut into small cubes) and cook them for about 5 minutes more.
In the pan add the tomato pulp, 1 cup of water and rice. Add some salt, black pepper, oregano and fresh basil and cook them until the rice has absorbed most of the liquid.
Place the tomatoes in a pan coated with olive oil. Fill the tomatoes with the previously prepared mass. Finally, add some parmesan cheese (minced) and cover them with the slice cut from the upper part of the tomato. Cook them in the oven for about 20 minutes at a temperature of 360 °F (180 °C).
